Vanilla Bean Granola Recipe

I recently received this as a Christmas gift and man oh man…was it yummy.  And fortunately for me…and now you guys…the recipe came with the gift.  I am very excited to share this recipe with you guys.  And since I have already devoured the granola that I got for Christmas, I have decided to make more for myself in the near future.  When I do, I will take pictures and post them here. I have already enjoyed this granola as a cereal, a topping for fresh fruit, and with yogurt.  I can’t wait to make more so I can try it other ways.  However, I did not want to wait any longer to share the wonderful recipe.  So here goes…ENJOY!!!

In a small bowl mix the following ingredients:

1/3 cup maple syrup

1/3 cup coconut oil–melted

Vanilla caviar from 1 Indrivanilla vanilla bean

In a large bowl mix the following ingredients:

3 cups oats

2 cups nuts-finely chopped (cashews, pecans, almonds, walnuts, sunflower seeds, etc)

1/3 cup dark brown sugar

3/4 teaspoon salt

2 teaspoons cinnamon

Once you have mixed all the dry ingredients together in your large bowl, mix in your wet ingredients and mix well.

Once mixed well, pour mixture into a large baking pan or onto 2 cookie sheets.

Bake for 75 mins, stirring gently every 15 mins.

Allow to cool completely.  Once cooled you can add in optional ingredients such as raisins, cranberries, other dried fruit, mini  chocolate chips, etc.  The options are endless.

Store in an airtight container.
